Halibut Saltimbocca
8 - 4 ounce halibut llets
2 ounces thinly shaved Pecorino Romano cheese
(24 slices)
8 sage leaves
8 very thin slices prosciutto
1 teaspoon black pepper
1/4 cup olive oil
Preheat oven to 350°F. Top each sh llet with 1/4 ounce of cheese (3 slices), then place sage leaf over the cheese. Wrap the sh with 1 slice of prosciutto, leaving the ends of the fish exposed. Season with 1 teaspoon black pepper.
In a large skillet, heat olive oil on medium-high heat. Place wrapped halibut seam side down in skillet and sear each side until golden in color - approximately 1 minute per side. Transfer sh llets into a baking dish seam side down again and place in the oven. Bake until sh akes with a fork and reaches an internal temperature of 140°F - approximately 6 minutes. Serve immediately.
