Kolokythia Krokettes (Zucchini Pancakes)


3 cups grated zucchini
1 teaspoon salt
3 eggs
1 cup grated feta cheese
1 1/2 teaspoons minced fresh mint leaves
3 tablespoons flour
PepperButter

Mix zucchini with salt and let stand 1 hour. Squeeze out moisture. Beat eggs. Add zucchini, cheese,mint, flour and pepper to taste. Fry 1 tablespoon at a time in butter over medium heat. Brown on bothsides.
Makes 18 pancakes or 6 servings.
