PILAFI

Ingredients:
2 cups long grain rice
½ cup chopped green pepper
½ cup chopped red pepper
½ cup chopped onion
1/4 cup chopped celery
2 tbs minced parsley
1 clove garlic, minced
1 cup olive oil
1 cup of water
1 package or cube of vegetable stock
salt and pepper
dash of oregano, thyme and cumin

Directions:
1. In a large pot, heat the olive oil.
2. Add the peppers, onions, celery, parsley and garlic.
3. Fry lightly then add the rice and fry it all together for a few minutes, stirring constantly so the rice doesn't stick.
4. Add your spices and stock. Stir, mixing well.
5. Let cook until the rice is tender.
6. When the rice is done, take the pot off the heat and cover tightly. Let sit for 10 minutes before serving.
