TRAHANA (SOUR DOUGH SOUP)

½ cup trahana
1 tbsp olive oil
2 cups water
tomato paste
butter
grated Romano cheese (optional)

1. Bring the water and olive oil to a boil.
2. Add the trahana and stir constantly for approximately 20minutes.
3. Add a little tomato paste and salt to taste.
4. Serve with grated Romano cheese and a little bit of butter in each bowl.
