OVEN FRIED SALMON CAKES


Makes: 4 Servings

2 large egg whites
1 15oz can Salmon, drained and flaked
1 cup fresh bread crumbs
1/4 cup scallions, chopped
2 tbsp lemon juice
1 tsp Worcestershire sauce

1. Preheat oven to 400 degrees.
2. Spray cookie sheet with cooking spray.
3. Beat eggs in a medium-size bowl.
4. Add all remaining ingredients; mix well until blended.
5. Shape into 8 ½ inch patties.
6. Place on prepared cookie sheet and bake 10-12 minutes, turning once until golden on both sides.
7. A great low-fat alternative to frying.
