PASTA AND BEEF SALAD


Makes: 8 Servings

1 lb Ozro, Small Shells or other pasta shape, uncooked
2 cups roast beef from the deli, cubed
3 medium ripe tomatoes, chopped
1 cup zucchini, chopped
1 cup fresh parsley, chopped
½ cup green onion, freshly chopped
2 tbsps fresh mint, minced
3 cloves garlic, minced
½ cup lemon juice
2 tbsps olive or vegetable oil
1 tsp black pepper
salt to taste

1. Prepare pasta according to package directions.
2. Drain and rinse under cold water; drain again.
3. In a large mixing bowl, combine pasta, beef, tomatoes, zucchini, parsley, onion and mint.
4. In a small mixing bowl, combine remaining ingredients; whisk well.
5. Toss dressing with pasta mixture.
6. Salt to taste.
7. Serve immediately or refrigerate until ready to serve.
